ABOUT US

When Warude’s founder Yuichi toured the Ivory Coast with his band “Brown Rice Family,” he met a Lebanese chef who enlightened him about the origins of Tacos Al Pastor. It was a product of Lebanese emigrants putting Shawarma on flatbread. At first they used traditional lamb meat but eventually switched to pork and replaced the flatbread with tortillas to adapt to their surrounding culture and its available ingredients. Intrigued by the history of fusion culture, he continued to learn and even discovered the origin of fish tacos which came from a Japanese fisherman in Mexico who attempted to fry the fish in tempura batter! It was then that he realized the potential for tacos as a vehicle for innovation and collaboration. And just as he had done with his music, Yuichi set out to blend the best of many cultures to create something entirely new. 

 

New York was the perfect city for such an endeavor. And thus WARUDE TACO was born in the heart of Bed-Stuy, Brooklyn – a casual dining spot with great music and world-fusion foods. 


 

*Today more than 90% of corn grown in the U.S. is genetically modified and has detrimental impacts to our environment and our health. With respect to traditions of Native Americans and Native Mexicans, WARUDE uses non-GMO organic corn and flour tortilla, local and seasonal organic ingredients to make quality tacos.

Big and fat chickens that we see at many restaurants and food stores have been treated with hormones to increase their growth. In our restaurant, we use naturally grown chickens that are raised free-range without growth hormones and antibiotics.
